Хочу понять, какой камамбер лучше. Я купил President, он вроде польский. На вкус - ну, обычный сливочный сыр, даже немного резиновый. А французский, который стоит в 3 раза дороже, он реально мягче? Или такой же, просто за бренд платим? Я хочу тот, который внутри прямо течет

Ты сравниваешь абсолютно разные вещи. Польский (President, Lactima) - это масс-маркет. Он специально сделан мягким, сливочным и без запаха, чтобы всем нравиться. Настоящий французский (особенно AOP из Нормандии) - он резкий, с грибным, даже аммиачным запахом, часто с горчинкой. Он "вкуснее" для гурманов, но новичков отпугивает.

"Аммиачный запах" - это то, чего я боюсь. Я не гурман, мне резкость не нужна. Но мне нужна текстура. Польский, который я брал, был плотный, как обычный бри, совсем не "текучий". Я думал, камамбер должен вытекать, когда его режешь. Французский в этом плане мягче? Или польский тоже бывает мягким, а я просто не тот выбрал? Я его запекать пробовал, он просто стал теплым, но не потек.

Во-первых, любой сыр с плесенью (и польский, и французский) надо достать из холодильника за час до еды. Холодный сыр всегда будет резиновым и безвкусным. Он должен нагреться до комнатной температуры.
Во-вторых, смотри на срок годности. Если ты берешь "свежий" (в начале срока), он всегда будет плотным. Если хочешь текучий, бери тот, у которого срок годности заканчивается через неделю-две. Он зрелый.
Польский (President) редко бывает текучим, он скорее кремовый. Он как раз хорош для запекания, потому что держит форму. Французский (AOP) - вот он должен течь, если зрелый. Но он и будет резким, "вонючим". Так что тут надо выбирать: или мягкий сливочный вкус (Польша), или резкий вкус, но текучая серединка (Франция).
