Ingredients:
2 tablespoons olive oil
1 small onion, finely chopped
1 small green bell pepper, finely chopped
1 stalk celery, finely chopped
3 cloves garlic, minced
1 can (14 oz / 400g) diced tomatoes (with juice)
1 tablespoon tomato paste
1 teaspoon paprika
1/2 teaspoon cayenne pepper (adjust for spice level)
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1 teaspoon Worcestershire sauce
1 teaspoon hot sauce (optional, for added heat)
1/2 cup (120ml) chicken or vegetable broth
Salt and black pepper to taste
1 bay leaf
1 tablespoon fresh parsley, chopped (for garnish)
Instructions:
Heat olive oil in a large skillet over medium heat. Add the chopped onion, bell pepper, and celery. Sauté for about 5 minutes, or until softened.
Add the minced garlic and cook for another 30 seconds, stirring frequently.
Stir in the diced tomatoes, tomato paste, paprika, cayenne pepper, thyme, and oregano. Let the mixture simmer for 5 minutes to allow the flavors to meld together.
Pour in the Worcestershire sauce, hot sauce (if using), and broth. Stir to combine.
Add salt and pepper to taste, and drop in the bay leaf. Simmer the sauce on low heat for 20–30 minutes, stirring occasionally, until it thickens.
Remove the bay leaf, and adjust seasoning if needed.
Garnish with fresh parsley and serve.
How to Use It:
Serve over grilled shrimp, chicken, or fish for a delicious Creole-inspired dish.
Spoon over steamed rice or pasta for a hearty meal.
Use as a flavorful sauce for gumbo or jambalaya.
